INGREDIENTS

4+ oz Pura Vida Spicy Peanut Sauce*

16 oz The Doc’s Favorite Marinated Tofu* (optional)

10 oz Organic Pad Thai Rice Noodles

1 tbsp Organic Virgin Coconut Oil

1/4 cup White Onion minced

2 Garlic cloves minced

1/3 cup Carrots Shredded

1/3 cup Broccoli Florets chopped fine

1/3+ cup fresh Bean Sprouts

1 Green Onion chopped

1/4 cup fresh Cilantro chopped

1 tbsp Tamari

2 tbsp fresh Lime Juice

1 Lime cut in wedges

1 tsp Garlic powder

1/4 tsp MSG

1/4 tsp Mustard powder

Red Pepper Flakes (to garnish)

UTENSILS

Large Cooking Pot with Lid

Pasta Strainer

Tongs

1/4 Teaspoon

1/2 Teaspoon

Teaspoon

1/3 Cup

Chef’s Knife

PREPARATION (Pad Thai Pasta)

  1. Cook Pad Thai Rice Noodles according to package’s instructions

  2. While the Noodles are cooking prepare your Vegetables

  3. When the Noodles are done Strain them, rinse the Noodles with ice cold water until all of the Noodles are cold to the touch, don’t be afraid to get your hands in there

  4. Leave the Strained and Cold Cooked Noodles in the Strainer

  5. Return your Large Cooking Pot to the stove on Medium Heat

  6. Add Coconut Oil and Onion to the Large Cooking Pot

  7. Sweat Onions for 2-3 minutes until they start to turn translucent

  8. Add Garlic and let Garlic Bloom for 2-3 minutes until the Garlic starts to become aromatic

  9. Add Carrots, Broccoli, Garlic powder, Tamari, Lime Juice, MSG and Mustard powder

  10. Mix thoroughly

  11. Let cook 4-6 minutes stirring occasionally

  12. Add The Doc’s Favorite Marinated Tofu* (optional)

  13. Add Cooked Pad Thai Noodles

  14. Add Peanut Sauce

  15. Mix thoroughly

  16. Cook until Noodles are hot

  17. Remove from the Heat

  18. Add Cilantro and Bean Sprouts

  19. Mix thoroughly

  20. Garnish with Red Pepper Flakes, Lime Wedges, Green Onion and dollop of Peanut Sauce

  21. Eat and enjoy because every bite nourishes your body
