When we think about “health food” we often think about how we’re going to restrict, limit or otherwise punish ourselves for our health blah blah blah eat food that tastes bland like cardboard covered in despair because we have to blah blah blah…
I completely reject this line of thinking. We encourage you to eat more frequently and eat more calories as often as you want whenever you feel hungry, we encourage you to eat pizza, pasta, bread, ice cream and cake and you “reward” yourself everyday with delicious decadent dishes just with different ingredients.
We’ve been taught cancer is a death sentence and gluten is part of a balanced diet when the opposite is true. Gluten will kill you, cancer is the cure and food is our medicine. Healthy food is delicious and makes us feel good elevating our frequencies to be in harmony with creation.
As a doctor, naturopath, nutritionist, healer and chef every dish from my kitchen to yours is a work of art that sparks your imagination and engages your senses while healing and strengthening your body without sacrificing taste.
I developed this Morning Banana Split recipe during a plague of bananas that once overtook a small Costa Rican beach hamlet I once lived. This crazy Cuban stole a pickup’s worth of bananas from an overturned abandoned Dole truck and gave everyone in our town huge bunches of bananas. This gift started with lots of tasty banana waffles and tropical smoothies until months passed, our town was still overrun with bananas and we were all sick of them. We got creative with mixed results. Banana “fries” were pretty popular-ish for a hot minute although the grilled mahi-mahi stuffed with banana slices much less so. When everyone else went savory I felt inspired to load up a classic banana split with a bunch of healthy ingredients. I love the contrast of textures and balance of sweet and salty and lots of fresh fruit. The first time I made this dish I had a bunch of fresh pineapple, papaya, guava and passion fruit which made an equally delicious though very different banana split experience. Often I use whatever whole organic fruits are ripening in my garden or gifted to me other humans with abundance in their gardens. Regardless of the fruits I’m using, every time I start to prepare this dish my mouth begins to water. Every bite feels like an indulgence.
